What is Bijano?
Bijano is a carbonated yogurt beverage that combines your favourite parts of smoothies and greek yogurt with a little fizz to keep you on your toes. A modern twist to an ancient Persian recipe, Bijano is the product of a long history of yogurt making and experimentation.
How did it come about?
I’ve been making yogurt for years (thanks to my grandmother) and now that I have a young family, I wanted to make a fun and healthy yogurt drink for my daughter to enjoy as a snack. So I thought, why not add some bubbles?
I had recently bought my wife a Soda Stream and, inspired by Doogh, Iran’s widely-loved fizzy, fermented yogurt drink, I thought I would try carbonating a smoothie I had just made. Not surprisingly, I broke the machine (it was only 1 week old). When I finally yanked the over pressured bottle of the machine, my kitchen was immediately doused in a fresh layer of smoothie… but it tasted awesome!
That began a long experimentation process to figure out how to properly carbonate a yogurt smoothie. Doogh is often created through a long fermentation process, which results in quite a sour flavor. I wanted to see if I could do it without losing the fruity smoothie taste. Not easy to do given the viscosity of yogurt and the fact that most co-packers won’t touch dairy. After many explosive experiments - hilarious for the kids, but the clean up was no joke - I’m happy to say that after a year and a half of tinkering, I’ve finally gotten Bijano down!
Where did the name come from?
The name Bijano actually comes from the Persian name “Bijan”, which translates to Hero in English and happens to be my middle name. A beverage for heroes, kinda thing. You know?
What makes it different?
Bijano’s got the probiotic benefit of Kombucha, with the nutritional value of Greek Yogurt. It’s the ideal morning pick me up, and a great post workout or afternoon snack.
